Vesuvio, which is near Naples in the southern part of the country. Start out by drizzling olive oil and sprinkling salt and pepper over pieces of chicken. Pan-sear it on the stove until it’s golden brown. But you’re not done yet - pop it in the oven with garlic, onions, and potatoes. Use an instant-read thermometer to check that the chicken is cooked all the way through at 165 degrees. Finally, when the other ingredients are slightly charred on the edges, you’ll know this dish is ready to be devoured!
