Friday Night LIVE 9|10 Recipes

During Friday Night LIVE on 9|10 we made:
Hummus
Ingredients:
2 garlic cloves (smash with side of knife blade to remove paper skin)
2 cans of chickpeas, drained, BUT save 2 to 3 Tablespoons of liquid
1 1/2 teaspoons of kosher salt
Dash of pepper
1/3 cup tahini paste (sesame paste)
6 Tablespoons of lemon juice – about 2 lemons (roll lemons to loosen juices)
Hand full of fresh parsley
½ cup extra virgin olive oil or olive oil
Add remaining liquid from chickpeas, if necessary
Directions: Add all the ingredients into a food processor with the blade attachment (if you use a blender, chop all items before adding them). Process until hummus is coarsely pureed or the consistence you like. Taste, for seasoning, add more salt as needed. Serve.
Add In’s (be creative try new things): Hot sauce, Paprika, Horseradish
Helpful Hint & Real Life Truth: Remember when adding ingredients like salt and pepper…. you can always add more, but you can’t take away.
Key West Minted Limeade
Ingredients:
¼ cup sugar
¼ cup fresh lime juice
4 fresh mint leaves
½ cub ice cubes
1 cup ginger ale, chilled
2 lime slices (optional)
mint sprigs (optional garnish)
Directions: Combine first 3 ingredients in a blender, and process until smooth. With blender on, add ice cubes 1 at a time; process until smooth. Stir in ginger ale. Serve over ice; garnish with lime and mint, if desired. Serve immediately. Yield: 2 servings (serving size: 1 cup).
Priscilla’s health hint: Replace the ¼ cup sugar with a ¼ cup of agave nectar (found at Trader Joe’s or Costco)
